做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖上锅(guō )盖焖。
