做法:春笋切成(chéng )片(piàn )后加(jiā )少许盐捞(lāo )出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
