做(zuò )法:春笋切(qiē )成片后(hòu )加(jiā )少许盐捞(lāo )出(chū )后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
