做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到(dào )水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
