做法:春笋切(qiē )成片后加少许盐(yán )捞出后用清水(shuǐ )浸(jìn )泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油(yóu ),放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
