做法:春笋切(qiē )成片后加(jiā )少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩住春笋,盖上锅盖(gài )大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍(shāo )收汁时盖(gài )上(shàng )锅盖焖。
