做法:春笋切成片后加(jiā )少(shǎo )许盐(yán )捞出后用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
