做法:春(chūn )笋切成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
