做法:洗净宰好鲫鱼,洗净(jìng )淮山和(hé )薏米。用清水(shuǐ )把(bǎ )陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一(yī )遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可(kě )品尝。
