做法:洗净宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上(shàng )擦一(yī )遍,放两勺(sháo )油,待(dài )油六成(chéng )热(rè )下鱼,煎(jiān )至(zhì )微黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火煮沸(fèi ),转中小火煲(bāo )一个半小时,下(xià )盐调味即可品尝。
