做(zuò )法:洗净宰好(hǎo )鲫鱼(yú ),洗净淮山和薏米。用清水把(bǎ )陈皮泡软(ruǎn ),拍裂(liè )一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫(jì )鱼和其他材料(liào ),武火煮沸,转中小火煲(bāo )一个半小时,下盐(yán )调(diào )味即可品尝。
