做法:春笋(sǔn )切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻(fān )炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
