做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块姜,热锅(guō ),用姜(jiāng )块在锅上擦(cā )一遍(biàn ),放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中(zhōng )小(xiǎo )火(huǒ )煲一(yī )个(gè )半小时,下盐调味即可品尝。
