做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米(mǐ )。用清水把(bǎ )陈皮泡(pào )软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其(qí )他(tā )材料(liào ),武火煮沸,转中小(xiǎo )火煲一(yī )个半(bàn )小时,下盐调味即可品(pǐn )尝。
