做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一(yī )遍,放两勺油,待油六成热下(xià )鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个(gè )半(bàn )小时,下盐调味即可(kě )品尝。
