做法:春(chūn )笋切成片后加少许盐捞(lāo )出(chū )后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火(huǒ )。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
