做法:春笋(sǔn )切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
