做法(fǎ ):春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬(áo )干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁(zhī )时盖上锅盖焖。
