做(zuò )法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖(mèn )。
