做法:春笋切成片后加(jiā )少许(xǔ )盐(yán )捞出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火(huǒ )煮开(kāi )后转中火(huǒ )。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
