做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮(huái )山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块(kuài )姜,热锅,用(yòng )姜(jiāng )块在锅(guō )上擦一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎(jiān )煮好的鲫鱼和其他材(cái )料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半小时,下盐调味即(jí )可品尝。
