做法:春笋切成片(piàn )后加少(shǎo )许盐(yán )捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春(chūn )笋,盖(gài )上锅盖大火煮开(kāi )后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时(shí )盖上锅盖焖。
