做(zuò )法:春(chūn )笋切成片后加少许(xǔ )盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时盖(gài )上锅盖焖。
