做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀(yún )稍(shāo )收(shōu )汁(zhī )时盖上锅盖焖。
