做法(fǎ ):洗净宰(zǎi )好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水把陈皮泡软,拍裂一(yī )小块姜,热锅(guō ),用姜块在(zài )锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和其他(tā )材料,武火煮(zhǔ )沸,转中(zhōng )小火(huǒ )煲一个半小时,下(xià )盐调味即可品尝。
