做(zuò )法(fǎ ):春笋切成(chéng )片后加少(shǎo )许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅(guō )盖焖。
