做法:春笋切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜切(qiē )片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻(fān )炒均匀稍(shāo )收汁(zhī )时盖上锅(guō )盖(gài )焖。
