做法(fǎ ):春笋(sǔn )切成片后(hòu )加(jiā )少许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
