做法:洗净宰好鲫(jì )鱼(yú ),洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用(yòng )姜块(kuài )在锅上擦一(yī )遍,放两勺油,待油六成热下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其他材(cái )料(liào ),武火煮沸,转中小火煲(bāo )一个半(bàn )小时(shí ),下盐调味(wèi )即可品尝。
