做法:春笋切成(chéng )片后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
