做(zuò )法:洗净宰(zǎi )好鲫(jì )鱼,洗净淮山和薏米(mǐ )。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块在锅(guō )上擦一遍,放两勺(sháo )油,待(dài )油六成(chéng )热(rè )下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转中小火煲一个半小时,下(xià )盐调(diào )味即可品尝。
