做(zuò )法:春笋切成片后加少许盐捞出后(hòu )用(yòng )清水(shuǐ )浸泡,生姜(jiāng )切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
