做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块姜,热(rè )锅(guō ),用姜块(kuài )在锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和(hé )其他材料(liào ),武(wǔ )火煮沸,转中小(xiǎo )火煲一个(gè )半(bàn )小时,下盐(yán )调味即可品尝。
