做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟(zhōng )左(zuǒ )右(yòu )。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
