做法:春笋切成片后(hòu )加(jiā )少许盐捞出后(hòu )用清水(shuǐ )浸(jìn )泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
