做法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡(pào ),生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入(rù )生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入(rù )少量(liàng )清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
