做法:洗(xǐ )净(jìng )宰好鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一(yī )小块姜,热锅,用姜(jiāng )块(kuài )在锅上擦一(yī )遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小时,下(xià )盐调味即可品尝。
