做法:春笋切成片后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火(huǒ )。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
