做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火煮开(kāi )后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
