做法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
