做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加(jiā )入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
