做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂(liè )一小(xiǎo )块姜(jiāng ),热锅,用(yòng )姜块在锅上擦一遍(biàn ),放(fàng )两勺油,待(dài )油六成热(rè )下鱼,煎至微(wēi )黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫(jì )鱼和其他材料,武火(huǒ )煮沸,转中小火煲一个半小(xiǎo )时(shí ),下盐调味(wèi )即可品尝。
