做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻(fān )炒均匀,加入少(shǎo )量(liàng )清水半掩住(zhù )春笋(sǔn ),盖上(shàng )锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时(shí )盖(gài )上锅盖焖。
