做法(fǎ ):春笋切成(chéng )片(piàn )后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热(rè ),倒入(rù )2勺油(yóu ),放(fàng )入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
