做法:洗净(jìng )宰好鲫鱼(yú ),洗净淮山和薏米。用清水(shuǐ )把陈皮泡(pào )软(ruǎn ),拍裂一(yī )小(xiǎo )块姜,热锅(guō ),用姜块在锅上擦一(yī )遍,放两勺油,待油六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮好的鲫鱼和其(qí )他(tā )材料,武(wǔ )火煮沸,转中小火煲一个半小时,下盐调味即可品(pǐn )尝。
