做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再(zài )加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半(bàn )掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅(guō )盖焖。
