做法:春笋切成(chéng )片后加少(shǎo )许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅(guō )烧热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
