做法:洗净宰好鲫鱼(yú ),洗净淮(huái )山和薏米(mǐ )。用清水把陈皮泡软(ruǎn ),拍裂一(yī )小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦(cā )一遍,放(fàng )两勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他(tā )材料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下盐(yán )调味即可品尝(cháng )。
