做法:春笋切成(chéng )片后(hòu )加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽(chōu )、老抽、蚝(háo )油(yóu )翻(fān )炒均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
