做(zuò )法:洗净(jìng )宰(zǎi )好鲫鱼,洗(xǐ )净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用姜块在(zài )锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲(bāo )里(lǐ )的清水,放入煎煮好的鲫鱼和其(qí )他材(cái )料,武火(huǒ )煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调(diào )味即可品尝。
